I did this many times when my kids were riding (not professional, so not nearly as fast). I got the best shots with a 5DII and 70-200/F4.0IS, but often wished I had the 2.8, since it tended to be rather dark in those halls. Trying to plan ahead helps: after a few riders you know which direction they are jumping and you can pick a suitable hinder at about the right distance for your gear. Using AI-Servo autofocus should help as long as you can keep the focus point on target, but as the other person said, manual focus with motor-drive might be better. Trying to follow a rider throughout the whole track usually means you are too late to get the shot - I was anyway.
