I've shot at St. John the Divine Cathedral in NYC a few times, since I live nearby. The 7-14mm is perfect there.

I generally look for things to lean against or use an SLR GorillaPod on the floor or on top of a pew.

Sometime I'd like to try and take a chance with my tripod and a 200mm or 300mm telephoto for some of the details near the ceiling or some of the stained glass. My guess about using a tripod would be to try and not block the aisles by fully extending it. Using a cable release Seems like a good idea, too.
