How often do you adjust aspect ratios during processing?

I did a photographic tour last year where we were told the value of the golden rectangle, and how it has been shown that it is the most pleasing shape to the average person's eye. See here.

But for me it depends entirely on the subject matter and what I'm planning to do with the photo (such as fill a space on a page of a book).
