I change ratio regularly if the resulting composition is better. I often plan to do so when in the field, i.e. I plan some cropping in one dimension and maximize the other dimension to fit the subject and keep as much resolution as possible.

When I publish on the web, I freely use any ratio that fits the best composition, it is part of the creative process: decide what to keep and what to hide from the viewer.  Forcing any given ratio is a useless technical constraint IMHO, it weakens our creative process.

When I sell prints, I keep this free ratio. The internal mat dimension is custom-cut, the external mat dimension is kept standard to facilitate the choice of a frame (i.e. a client doesn't need a custom-built frame)

When I do exhibitions, I reuse my black mats and I then try to fit within 4x6 or 2x6 ratio unless I absolutely want to keep the critically "best" ratio.
