Metering in difficult situations

I know about HDR but I wasn't thinking about those kind of situations. Rather those instances where you simply can't rely on the evaluative (Matrix in Nikon speak as far as I know) metering and get it right, but something the camera CAN do. Those links above touch the subject but I would like some more in-depth information to read (and practice).
