I too enjoy shooting (with camera) wild turkeys at my mother's place in SW Oregon. Not only are they colorful, but charismatic as well.
Your "white" turkey may be the product of a roaming tom from the local turkey farm, the fabled "sacred" white turkey of legend, selective overexposure or a genuine genetic fluke. My guess is the last but be careful in case it is sacred;-)
These white jobs don't last long in the wild so its good you got the shot.
