Wait a minute. Their logic is completely incorrect. They say that they have not seen this problem with all the other manufactured E-M5s. So, when it happened with one camera, by their logic it is not a manufacturing problem? That is absurd. In fact, when it happens to only one camera, it is, in fact, only due to a manufacturing problem. Something went amiss during manufacture with the coating.
And, if it is due to environmental reasons, then a poorly manufactured E-M5 (with improper coating) would indeed result in peeling. So, once again, it is due to a manufacturing problem.
You need to hammer on Oly about this. Their explanation and denial is absolutely unacceptable. They are clearly not accepting responsibility for a problem that is of their doing. They are trying to place the blame on you by saying that this has not happened to other cameras, so it can't possibly be their fault.
