Color Profile

Good am/pm masters...a question from a newbie to printing pls. I just installed a Spyder4Express and calibrated my iMac w/ it. It then created a color profile aptly named: Spyder4Express and I set my Mac to use that. My question is: When I use Photoshop or Illustrator, do I use the Spyder4Express profile and embed the profile or use the default sRGB? What do I use if I want to have prints made by a commercial lab but I can't get or they won't give their color profile? I'll be using it to print shots taken by my Nikon D5100.
