If you can afford the D800, then GO FOR IT!
Take your time, learn, practice and you will master it gradually. But don't be afraid, it won't take years! Keep practicing the same thing, the same technique, then move on to the next and so on. For e.g: Start with landscapes first, then portrait, then macro, then night-time (in any particular order) and just keep shooting, comparing, adjusting, watching others do the same, learn from them, and you will be FINE!
Most people buy less camera because they can't afford it, or see no point of spending so much when all they want is better quality images. I say GO FOR IT and enjoy your new toy!
