What are the best of class post-processing tools.

I'm writing a piece about post-processing. The idea is to explain how to maximize the quality of digital captures using modern technology.

I'd like to ask the more technical people here for their thoughts on the best tools for each common process.

I.e. Lightroom and PS do not apply linear gain to RAW files and so people shooting ISOless often prefer to use Raw Therapee or other tools which do.

If you know what's 'under the hood' of various software tools which do you recommend for...

1. Noise reduction
2. Stitching/panoramas
3. Exposure compensation
4. Color correction
5. Sharpening

I'm not concerned with price or prettiness. I'd like to know where the very best technology is. It's easy to assume it's PS/Lightroom even when it isn't.
