My understanding is the following: moire is an artifact due to image sampling; it is the result of the interaction between the spacial frequency of the sensor pixel pattern and the spacial frequencies that are in the image.

By having a less regular pattern, the result of this interaction result (i think in a bigger spread of spacial frequencies in the resulting artefact; essentially, you transform the moire, that has a well identifiable visual structure, in something more resembling real noise in its characteristics, so being less visible and that can be handled by standard noise reduction algorithms (as said by another post).

DIsclamier: i am actually not a digital image expert, but a digital sound expert, so i may have gotten everything wrong :-> .
