Can only get 207 Pics on a 16 or 32 GB HD or SD Card

I suggest:

(a) you undo the setting you changed
(b) ensure that you have the latest firmware:
http://web.canon.jp/imaging/eos1dm2/eos1dmk2_firmware-e.html

You may have old firmware, but formatted the cards elsewhere (PC?) and then used them. By formatting them in camera you may be subject to the limitations Canon outline in the firmware update page.
