I don't care for Nikon jpeg colors either. That's why I ended up ditching my D700 a few years ago. I found all the colors rather unpleasant. Of course this is just jpeg rendering and you could get whatever you want from the raw file, but then you've got to figure out how to get there with the raw file which could take some time.

That's what I like about shooting Canon and even Sony. When I do shoot raw, Aperture gives me a starting point that is close to what the jpeg looks like. Then I can tweak from there. From what I've noticed on the web, it seems that the DX bodies have punchier jpegs. There is a Canon look though and I prefer it for portraits.
