How to prep shots for lab in LR 4 ? New D7000

I'm taking pics for charity at a bike show with my new D7000 and wondering how to prepare the pics for the lab in Lightroom 4, print size will be 8x10 . I saw somewhere that If you crop everything for 11x14 the labs can make any size from that . Help much appreciated . Is the NX software any good for this ?
