How to shoot shallow DOF portrait with FX?

I am studying the D600 ...

With the small coverage of the AF points on D600, I guess you have to do focus and recompose, but this may not work when shallow DOF is intended, or high failure rate is expected -- missing the shot. So this turns off my temptation to buy D600.

Another way would be to focus on the eye with an outer AF point, and crop in post processing, but you wast your pixels of the sensor. no?

The third way would be going with DX because of the larger AF point coverage? Sigh!

How would you do it? Actually D700 has this problem also, but the D600 is even worse than D700 with regards to AF point coverage.
