Assuming budget not an issue the answer is FF. Why? Because you use longer focal length lenses to get the same framing, the areas of the photo outside of the depth of field get blurrier sooner.

Assuming you want the blurred background characteristic of much pro sports photography, FF all the way. If budget plays a part then APS-C saves you a fortune with the 1.5 or 1.6 crop factor.
