First of all, Depth of Field is determined by subject magnification and aperture, the focal length of the lens and type of lens dont matter.

If you're shooting mostly in a studio environment with flash, then IS isn't going to help you. If, on the other hand, you shoot mostly available light and generally static subjects, then IS can be very useful.

The examples you show are mostly just close-ups, rather than macros. Your 24-105mm will give you a maximum magnification of 0.23x (at 105mm) - that means you can fill the frame with a subject just 6" across (if you're using a full frame body).
