Looking at Sony A57, T3i, and Pentax K30

Will buy the Fuji X100 as a walk around camera but also wanted to get a dslr. I am looking to purchase either a Sony A57, Pentax K30 or Canon T3i. Will mostly use it for video, action shots and wildlife photography. Does the Pentax have manual controls in video? how does it compare to the Sony and Canon?
