On the first screenshot, red channel is spread between values 317 and 508, that is having 191 values in total. The statistics show that red channel provides 158 values to cover those 191. That is very close to white balance preconditioning factor and does not cause posterization.

However the green histogram is a little suspicious in the sense that 32 values are missing.

Blue channel histogram shows excessive number of levels missing.

Can you check the same way some similar sky shots on other images; shots where you do not see posterization?

Was there any filter on the lens? What was the lens? Have you tried to shoot with a nearly discharged battery to check if the response you got from Nikon is a valid reason?
