ISO vs A vs S? No ISO priority?

ISO vs A vs S? No ISO priority?

I've recently 'graduated(?)' from auto to manual - either aperture or shutter speed priority as the situation dictates. So I'm always fiddling with whatever prioirty I'm using - but the ISO goes up and down at will.

I'm trying to understand why A and S exist but I (what I would label as ISO priority) doesn't? I'm often seeing IQ and noise conversations that all referrence the differences at varying ISO levels, such as "pretty good below 800" or "bag of dirt above 1600", etc. but the camera controls don'e seem to give it much of a priority.

I only have a P&S (Lumix FZ200) but I've tested and played with various DSLR's and, layout aside - they seem to have this "A or P but no I" in common.

Can someone help me understand?
