Ya, know, there is an easier way to do this. Instead of lighting just from the front. Light through a giant sheet or "pillow" from the back (even a giant soft box works well), adjust your aperture until the background is pure white ( this also hides any texture in the background). Match a front light to the back light then put in the model. As far as metering goes, hold the meter about 2-3 feet off the background, get a reading, then turn the meter to face the camera and match the front metering to the already established background. Easy as pie.

It's a classic setup that takes just a few minutes to do.
