"Portrait" is a broad term. Simply put, you can take great portraits with ANY focal length. There are no rules. Check this guy's stuff out: http://www.flickr.com/photos/lomokev/sets/310825/

That said, I think 35mm is pretty good for general purpose photography and that's why they use it, along with the fact that it's relatively easy to optimize...to squeeze out the best optical quality. Zoom in an out with your feet.
