What would professional photographers prefer? and what do they look for?

What would professional photographers prefer? and what do they look for? and why?

I understand that Canon 7D is probably more durable than Nikon D7000 , it has faster continuous shooting and better buffer... but I still wonder, what are the other differences that makes the 7D a pro DSLR but the D7000 is categorized one level below?

Body design?
The size and feeling?
Sealing and durability?
Fast continuous shooting? probably not always...
Freedom with settings?
Price of accessories?
More accessories?

Uhm... what would a professional photographer miss if they had Nikon D7000 instead of Canon 7D ?

I'm trying to compare these two, not by their specifications, but by their real advantages and usability, in the hands of a professional photographer.
