Photoshop and the optional plugins can correct or add distortion. Extreme depth of fields can be achieved with focus stacking (but this is limited to static subjects). The big advantage of a tilt shift lens is it can do all the above at the point of capture, and it doesn't require the subject to be static. However focus stacking will create a greater depth of field than you can with a T/S Lens. In reality its good to have all the options at your disposal. The OP should hire a T/S lens for a few days to compare the differences, but be prepaired to make a big purchase afterwards...
