It is easy to solve that one : record 3 images with R,G and B monochromatic light - the resultant forms the color index file for that camera.

The camera itself would use this to do the random to RGB conversions producing standard jpgs and DNG files.

If you produced truly random RGB sensors with each one different, eventually you would make a camera where every pixel was green! As a more practical concern, you would risk making sensors with lines or patches of uniform sensors, which would cause terrible color artifacts...
