How do you do more than a 30 sec exposure/how do you expose it!?

Set the exposure to manual, then BULB as others have said. Set the aperture to whatever depth of field you want. I then take the trial and error approach to shutter time - but others may have more of a scientific approach to this. Works to me and usually only takes a few iterations to get the timing I need for the shot.
