Set the exposure to manual, then BULB as others have said. Set the aperture to whatever depth of field you want. I then take the trial and error approach to shutter time - but others may have more of a scientific approach to this. Works to me and usually only takes a few iterations to get the timing I need for the shot.

I got a programmable wired remote on Amazon for under $12. Will work for individual manual long exposures as well as doing time lapse. Should be a lot of fun.
