why not always shoot at f8?

Hi, ive always shot with my flash strobes at f8, iso 100 and max sync speed of 250th…(flat lighting for children)

I have recently been learning other types of studio setups and one of the videos that I watched, a lady (who has also photographed Obama and Hilary Clinton…was shooting a child at about f3.5 at 120th sec.

I don’t understand why you would not always use max sync..to avoid motion blur and use such an aperture as f8 tends to be a sweet spot and will get all your subjects in focus.

Any advice would be appreciated thanks
