You are confusing the iPad with the Cloud service referred to as Photo Stream. That allows you to share your photos between all your Apple IOS devices and Macs. I'm also just learning about the cloud and is there some way I can keep the photos from streaming until I want them too? Is the new iPhoto best for the iPad?

I assume you are referring to Apple's Photo Stream service. Yes, you can disable it on the iPad (BTW it only works when the iPad is connected to Wifi, not cellular anyway).

I like iPhoto on the iPad. Has some nice editing features and displays the images nicely also. Has some limitations such as you cannot make albums from within the app (I had to do this in the Photo app) and while you can delete photos from the iPhoto albums, it does not actually delete them from the iPad - again you have to do that in the Photo app.

Any advice about viewing, etc. photos on the ipad will greatly be appreciated.

For just viewing, the included Photo app is fine. You can view the embedded JPEGs from your RAW files, set up albums if you want to keep track of where the photos were taken, delete photos from the iPad itself. I also like iPhoto for actually viewing photos, though you can't delete photos from the iPad using iPhoto, only the Photo app itself.
