The difference is calibration. If your screen (and printer if you are printing) are not properly color calibrated, then your results will be unpredictable.

I have tried numerous calibration systems and find the X-Rite products (formerly Gretag Macbeth) to be the best overall. Check out why this is important at:

As a side note, it is also the case that if you are viewing other's images (like from dpreview) on an uncalibrated screen, you are NOT seeing what the creator intended when working from a calibrated screen.
