Nikon D800E to replace 4x5 & 8x10 600, 800, and 1200mm lenses

I've been shooting with 4x5 and 8x10 film for several years and am starting to think about going digital, for the ability to better capture moments of light.

My favorite long lens set is a Nikkor-T 600/800/1200 convertible on 4x5 and 8x10, which is equivalent to 85mm, 113mm, 169mm, 225mm, and 338mm on a full-frame camera (obtain these equivalent focal lengths by dividing 600, 800, and 1200 by 3.55 or 7.1, the crop-factors for full-frame vs. 4x5 and 8x10, respectively).

Thus, I'm looking for a lens(es) to cover from 85-338, or around there...preferrably a little bit longer so I could use stitching but still get the same angle of view. Does the Sigma 50-500 perform well with the Nikon D800E? Does anyone have experience with other long tele zooms, like the Sigma 150-500, Tamron 200-500, Nikon 28-300 superzoom, or Nikon 80-400?

I'm aware that the Nikon 70-200 is probably the best optical performer, but it wouldn't give me the ability to stitch to come up with angles of view equivalent to > 200mm on full-frame. (e.g., is the 70-200 really so good as to overwhelm what can be obtained by stitching with the longer lenses mentioned above?). Any thought?

Also, with 4x5 and 8x10, I'm often trying to get a huge depth of field from very dominant foreground subjects to infinity. Sometimes I can do this with tilt, but often I do it by stopping down to f/64 - f/128. With a DSLR, I'd be looking to focus stack so I could use the lenses at their sharpest apertures, so the ability to focus close would be nice.
