How to capture projected images with canon cams.

I have been using the Canon 550D and 7D for a while now and I'm having a hard time capturing images being projected through a projector (obviously!). An example scene will be a speaker standing in front of his slide show presentation. I always get light and uneven coloration on the projected image (not the speaker) whenever i try to go for those shots. However when i use a Nikon cam (D3100, D700), the projected image (including the speaker) comes out perfectly. Is there a way for my Canon cams to replicate this? I've been experimenting with the picture styles, shutter, aperture and highlight tone priority to no avail.
