Help with White Balance

I've been having challenges adjusting white balance in my photos. Typically I shoot in Auto WB mode on my D7000 and more recently started shooting RAW.

My concern, in post processing (using Capture NX) is ensuring I'm getting the right adjustment to WB. I like to use Curves and pic the grey point (from using the same method in PS years ago).

The problem is that I get wildly different results when I know that I'm choosing something that is grey (e.g. grey pants of my son's baseball uniform). Some of the WB adjustments are obviously wrong, others more subtle which has me wondering if they're right. I'd expect this to be more deterministic.

What could I be doing wrong and is their a different method I should use? Any help is much appreciated.
