G12/G1X experience

Not sure what you mean by "but only apply when shooting jpeg" - the G1X appears to apply the 1:1 format to the raw image as well as the jpg (and IIRC, the G12 did the same).

When I open a G1X raw file in ACR that I shot in 1:1 aspect ratio, it opens as a 1:1 image. Are you suggesting that the sides are hidden somewhere in the raw file?
