Isn’t it quite simple?

You use single center point only if you have a real narrow depth of field, because then you really need to place the focus on the eye.

If you use higher aperture you can take advantage of the luxury to use more AF points, because the complete subject stays in focus and the camera has a more easy job to keep track on moving subjects.

The DOF determines how many AF points you “allow” the camera to use.
