400mm F5.6 need help

Ok so off I trundle to the Kruger Park for the weekend with my new to me 50D and 400mm full of expectation and expecting excellence. This was about as good as it got.

Well what I realised was that the 400mm apparently requires some real skill which I apparently lack. I was shooting RAW for the first time and my results were poor to say the least, they lacked the crispness and definition I was expecting from the lens. Not the lens' fault.

Most shots were taken wide open at 1/1000s but apparently even this is not enough to fully freeze movement. The other thing I noticed when tweaking the pic's was that my focus point was seldom were I had intended.

So the long and short is that I need help please?

The focus point is due to me handholding and shaking so I realise I need to use support / bags / pods as much as possible.

Where does one focus on an animal / bird. One the eyes / body?

Any other tips on using a non IS long lens?
I am not so under the affluence of incahol as thinkle peep I am!
