Pets Setting Help!

Im shooting my co workers dogs and cats.. i have never shot pets before, and have not done a lot focusing of moving subjects.

LENS:
Lens recommendation. i have 24-702.8 70-200VR2 2.8 50mm 1.4G

FOCUS:

I have read the manual and for best for unpredictable subjects 21 point dynamic area.

LOCATION:
Will probably outdoor at the park from 8am - 10am. Will a CPL Filter be ideal?

FREEZING:

Should i start of with 500 shutter would that be enough for freezing motion? one of the dog is chiwawa another 1 is a little bigger i don't know what its called!

Also has anyone experienced a big slow down when editing your D800 Raw files in ACR? i have no problem editing from my D5000 and D300
