it's not quite as simple as that....

it looks like Canon in the 5d3 decided to make the evaluative metering very conservative to stop burning out highlights... rather than leave it neutral and let the user decide...

so I find that with fairly even predictable lighting then somewhere between +1/3 and +2/3 works. However, when the lighting is complex, say multiple highlights, then the meter is pretty much spot on so your compensation becomes overexposed ....

however, shooting RAW and thus having more pp control means that over exposure is much better than underexposure so...

bottom line: if in doubt go +2/3.
