Beware.

When the camera over-exposes one or more channels, there is data loss in that channel (the reading clamps at the maximum value so all detail in the over-exposed areas is lost.

You're much better off dialing back the exposure before taking the shot. I've gotten in the habit, when taking shots with saturated colors (esp. reds, blues, and purples) of taking a test shot and checking the RGB histogram. If any channel's graph goes all the way to max, I dial in some exposure compensation and take another test picture until that channel doesn't reach the max reading.

Note that specular highlights are an exception to this. If the image has specular highlights then those will be at max, so you have to allow for that when viewing the histogram.
