What to METER on

I am a fairly new DSLR photographer with a Canon D60, and am very confused about metering - not the technical what buttons to push in the camera questions - but how to evaluate the scene and decide what to meter on. I am shooting outside landscape and travel.

I've read a lot of books (Kelby, Peterson, etc) and have been told to meter off the sky, off the tarmac, off the back of my hand, off a gray card… and now I'm overwhelmed with too much information.

Do I look for something in the scene that is close to the midtone gray and meter off that; do I meter off my primary subject; should I travel with a gray card and meter off that? Or do I just use evaluative metering for the whole image?

I'm hoping for some general guidelines to help me get some decent photos to start with, that I can improve on over time. Thanks
