Camera/lenses recommendations for a painter

Hi I need some camera expertise in selecting a camera and lens. I'm a painter and I want to buy a digital camera so I can take reference photos to paint from.

This means I need the highest res photos I can get for my price range, also I'm looking for a camera that will accurately portray color well. Something that will not distort colors too much by giving it a warm/cool wash, if that makes sense?

I paint mostly portraits/figures and paint directly off of my monitor so printing photos is not important. A camera that works well in lower light conditions would be nice but not a deal breaker. I plan to eventually invest in some simple lighting equipment.

I am also not in a rush to buy a camera so I can wait if something better is coming out next year.

I currently use a Canon Powershot SD780 but want something more professional. I use to dabble in black and white photography and had a darkroom in highschool so I am somewhat familiar with camera controls. But its been a while so I plan to study photography a bit more so I can take better reference images.

My budget is approximately $1200 for body and lens. Any suggestions would be great! Thank you.
