How to interpret D7000 Dynamic Range...

It is my understanding that a D7000 captures over a range of about 5 stops....
but that PP can raise this to an effective range of about 12 stops.
Is that the way to think of it?

I generally now am metering in manual and treating my camera as if this is so, and it usually works. I often get it right but find myself thinking about a 1 degree spot meter such as a used L-508. I'd prefer to get more exposures 'right' in the camera.

If I'm thinking about this right, has anyone actually profiled their D7000 for input capture...say with a nikor 12-24mm, and can speak to the actual range?
