SX40 Infinity Setting?

My primary interest is shooting landscapes and along with that come regular need to focus on clouds. My current method seems very clumsy where I need to find a contrasty subject at a nearly infinite distance then lock it in manual focus mode. It is slow but the worst part is every time I re-zoom I need to repeat the WHOLE process again.
There must be a better way.
Can anyone help?
