I'd set up in manual, with SS of your choosing (1/500 or better) and aperture of your chosing (probably wide open or one-third EV higher). Then let auto iso "ride", specifying your SS as the minimum and setting the xaximum to iso6400. I've used similar settings in past with good results.

Caveate: higher shutter speeds are better....if lighting allows and you can get good exposures at iso3200 and iso6400, then go for higher SS. Also, get a white/gray card and practice using it. Then when you get to the gym, set a custom setting. It is important to get proper light values in a gym, or you may get funky color.
