100% crop means that you show a portion of the image (usually something that is smaller than the average monitor) without downsizing it at all. This way we see all the pixels in that portion of the image. For example, say you have a landscape, and you want to show the shadow detail as a "100% crop." Use the crop tool on the image to select a portion of the shadows that will fit on your screen without downsizing. Then simply don't resample/downsize it at all, just upload that cropped portion.
