Portriat editing advice needed

Hi everyone,

I love the look and style of the two photos attached and was wondering how I could go about re-creating this look - I like the pale tones of the skin, but the strong satuation of the colours. Has the photographer done this in camera, or photoshop? I've had a look at some you tube tutorials on how to make skin pale (black and white adjustment then use the screen blend mode), and I've also tried changing the luminosity of the red channel. All these do pale the skin, but not to the same effect. I was wondering if an over exposure in camera would help - and maybe flat lighting?

Any advice or tips would be great!
