Nope, that little arrow isn't about bracketing; yup, that little arrow is telling you your picture is going to be black. It's your light meter in M. If it hasn't given you a problem in A you've just been lucky. In A your shutter speed will auto adjust for the correct exposure; in S your aperture will auto adjust. In M you've got to do that adjust yourself. You should dial up your aperture or ISO, or dial down your shutter until it lands in the middle. (In P and Auto the camera's doing all the work for you, of course.)
