Mac video memory - is it useful?

Just placed an order for an iMac 27" and am migrating from Windows 7 as I am sick of spending much time just maintaining Windows. However this post is not about starting another argument about Mac vs Windows, but to ask if any of the main line post programs make any use of the video ram on the Mac.

As it is difficult to user upgrade the video ram later, I opted for 2GB instead of the stock 1GB, but was wondering if there is any merit to this decision? It is the 27" Mac, and I shall be hooking a second (Dell) 27" monitor to it, using the Dual-Link DVI adaptor.

I use LR 4.1 and DXO Elite 7.5, and possibly flirting with Aperture.
