Thanks everyone for the replies! I'll be taking this advice and applying it in the next month or so and hopefully my skills will improve and these new methods will help me capture better images.

Now as far as MF vs AF, I do know a bit about that... I have a k1000 I shoot with too, and of course I use manual focus with it because, well, that's all it has. With my XSi I do it sometimes, but it's not as easy. Why? The focus screen and the brightness of the viewfinder. You can replace the focus screen on most DSLR's so that it's easier to pull manual focus. Lots of people who use old manual glass or are dead set on focusing manually use them.
