Canon’s blown reds bothered me even back to the 40D.

Here are Imatest charts for various picture styles on the 40D. I haven’t been able to find a complete set for the 7D or 5Dx.
Here is the Standard Picture Style for the 7D.

I have worked out a moderately satisfactory solution in-camera to reduce the over saturated reds using the Faithful Picture Style
inspired by the 40D Imatest charts.

On the 40D and 7D I used as default picture style a custom style with the following settings:
Sharpness 4
Contrast +1
Saturation +1
Hue 0
White Balance shift B1, M1 on the 7D and B5,M5 on the 40D

On the 5D3 (again, the reds from the Standard PS were annoying to me)
Sharpness 4 (you may like it lower if doing a lot of pp)
Contrast 0 (it seems that the 5D3 has more contrast than the 7D)

Saturation +1 (to get saturation back to approx. the Standard w/o the pushed reds)
Hue 0
White Balance shift 0

Color accuracy is better on the 5Dx as you would suspect except for the reds in the Standard Picture Style.
Here is the 5D2 Standard PS Imatest chart—haven’t found a 5D3 chart

So, try experimenting some with variations on the Faithful picture style. I have found it a great help in reducing blown reds.
