It´s basically a choice isn´t it? You can do the shallow DoF in camera, try to make sure you get it right by knowing what you´re doing and being careful and accepting the fact that sometimes you´ll mess up as the price of not spending hours in front of a computer screen trying to get an effect that doesn´t look quite as good as if you´d just gone the in camera route and got it right to begin with. If you´ve got a way that works for you, fine, but it´s not a general rule for all of humanity to follow. I´d rather have the option to do it both ways.
